Last-Minute, Fool-Proof Peanut Butter Pie

When I say fool proof, I mean it. This hit has been passed down through my undomestic family for years.

Hello, my name is Jessie Gable and I can't cook.

I have friends who will recount the spaghetti dinner incident of 2009 when I almost burned down my apartment.

I have a cousin who will tell you about the time I blew up a microwave with Easy Mac.

So when I have to bring food to a dinner, it's usually a nightmare. This one recipe has been handed down through my equally undomestic family. I've tried to bring fancier things to events, but this is always a hit. Always. You can also make it tonight and not worry about it until Thursday if you're swamped with other plans.

You'll need:

  • 3 ounce package of cream cheese
  • 3/4 cup powdered sugar
  • 1/2 cup peanut butter
  • 1/4 cup milk
  • 9 ounce package of Cool Whip. I know, it doesn't come in 9-ounce containers. I usually buy two and then guess on what an ounce is. This pie is not an exact science, so I usually estimate on a lot of the measurements.
  • Chocolate syrup
  • Graham cracker crust

What you do:

Beat cream cheese. Add powdered sugar and peanut butter. Beat. Slowly add milk. Fold in Cool Whip. Spread half the mixture in the crust. Dribble chocolate syrup over it. Fill in the rest of the pie filling. Dribble more chocolate syrup on the top and decorate by swirling it or dragging a fork through the chocolate. Freeze and then defrost 30 minutes prior to serving.Β

Told you it was easy. To date, we've never had a leftover piece. Plus, this was fairly cheap. If you have no ingredients in your house, it's about $10 If you actually have things like milk and sugar, it would be far less.Β
