• Observed heavy mildew accumulation on interior of ice machine. Clean and sanitize at the end of the first shift (shift that ends at 1:30 PM).
• Observed time/temperature control for safety foods (TCS foods) such as chicken salads and chicken wraps at temperatures of 50 degrees F to 58 degrees F on ice. Products were discarded upon request. Observed TCS items like cream in reach-in cooler at temperatures of 47 degrees F to 54 degrees F. Products were relocated to a working cooler. All TCS foods must be cold held at 41 degrees F or below.
• If using time as control for grab-n-go items (like chicken wraps, chicken salads) a written procedure must be available and times marked on items
• Wrap all fruit with edible skin (such as apples, pears, grapes) in saran/plastic wrap when placed out for self-service/grab-n-go.
• Add splash guard between handsink and 3-compartment sink.
