These Chicago restaurants are helping bring about a "green revolution," according to Food & Beverage Magazine.
CHICAGO, IL — Two Chicago restaurants were recognized for their excellent plant-based options, contributing to a "green revolution," according to Food & Beverage Magazine.
According to the magazine, vegan cuisine has transformed, with James Beard Award winners and Michelin-starred establishments challenging perceptions about what plant-based food can be.
"Today, America's culinary landscape has transformed dramatically, with prestigious restaurants across the country embracing plant-based cuisine not as an afterthought, but as a showcase for innovation, flavor, and artistic presentation," the magazine said.

The magazine recognized two Chicago restaurants, PLANTA and Fancy Plants Kitchen, for their dedication to elevating vegan food.
PLANTA started out in Canada before opening multiple U.S. locations in Chicago, Miami and New York. Each location showcases a stylish, upscale approach to plant-based dining.

"The Chicago location's Bang Bang Broccoli has developed a cult following for good reason," the magazine said. "It's a dish that demonstrates how proper technique can transform a humble vegetable into something extraordinary."
The magazine said Fancy Plants Kitchen is a standout in the region, with plant-based Lion's Mane Crab Cakes and Truffle Risotto gracing the menu.
"Chef Kevin Schuder's upscale vegan restaurant has quickly become a Chicago favorite for its creative approach to plant-based dining. Unlike many vegan establishments, Fancy Plants embraces the challenge of creating sophisticated dishes that appeal to all diners," the magazine said.
