
Joe Frillman is the Executive Sous Chef at Balena Restaurant in Chicago.
He will be presenting a five-course Italian-inspired dinner that revolves around the market. A large portion of the menu will not be determined until the day before the dinner, depending on what the market provides.
Portions of the meal will be family-style. There will be gluten, dairy and potentially pork. Per-person tickets are $65 and the event is BYOB.
