GLEN ELLYN, IL — From the moment Niaz Sathar discovered the French cooking style of flambé, he knew he would someday open his own restaurant. Shortly after completing culinary school in India, Sathar came to Chicago, where he met his wife, Patrycja Szkutnik, who also shared a passion for the restaurant business. The pair will bring this mutual love of dining to Curry a la Flambé, an Indian-fusion restaurant that's set to open in Glen Ellyn.

Sathar told Patch the restaurant prepares traditional Indian dishes in the flambé style, creating a unique flavor profile. The extensive menu features such inventive dishes as chicken makhani inferno, which is flambéd tableside, and flambé mango habanero paneer, which Sathar described as "a perfect balance of sweet mango and fiery habanero, finished with a dramatic flambé."

Tandoori lamb chops, malai chicken vol-au-vent, goat belly samosas and Goan lobster bisque soup are among the other unique menu offerings at Curry a la Flambé.

There will also be a full bar, serving up drinks like the smoked Desi old fashioned, Indian beers, pineapple-ginger mojitos and more.

Curry a la Flambé will be located at 462 N. Park Blvd. and its interior will evoke a "classic French bistro" with Indian accents, Sathar told Patch, "creating a warm, inviting atmosphere that blends both influences."

The couple chose Glen Ellyn because it is "such a beautiful town with a charming, almost European vibe," Sathar said.

"The community is warm and welcoming, which makes it a perfect fit for us."

Curry a la Flambé aims to start serving diners "within the next three weeks."
