LAKE COUNTY, IL — The family of a Grayslake North graduate has filed a wrongful-death lawsuit against Trinity International University in Deerfield, which claims food served at the school caused the college football player to suffer a fatal allergic reaction.
The lawsuit filed last week claims Avery Gilbert collapsed while at the school after eating food that contained fish proteins, causing his airway to be cut off within minutes and his heart to stop, according to the Daily Herald. The menu was labeled as allergen-free, Matthew Sims, one of the family's lawyers, told the newspaper.
Gilbert was an incoming freshman and football player at Trinity International University at the time of his death in August, according to a news release from the university. He was known for his infectious positive energy, generosity, and joy, according to a GoFundMe set up by his family and friends.
