Charcuterie Planned In Hinsdale's Downtown
The business, which is seeking a liquor license, is set to open in October.

HINSDALE, IL – A charcuterie, which is a store that sells cold-cooked meats, is proposed for downtown Hinsdale.
Owned by Hinsdale resident Janice Gerges, Gone Grazy is proposed for 19 W. First St.
Under its plan, Gone Grazy will offer a variety of items, including premade cheese and charcuterie boxes and boards, custom grazing tables, fruits, salads, gift baskets and supplies to make charcuterie boards and grazing tables.

Gone Grazy has provided information about its plan to the village government in an application for a liquor license.
The charcuterie will have on-site indoor seating, the business said.

The business is seeking a liquor license so that customers can enjoy their food with wine or beer. The Village Board is set to take its first look at the request at its meeting Tuesday.
Gone Grazy is set to open in October, according to its Instagram page.
On Gone Grazy's website, Gerges said, "I've always had a passion for cooking and entertaining family & friends. Settled in the Chicago Western Suburbs, I juggle a corporate career in digital marketing & promotions and being a wife & mom to two handsome boys."
She continued, "I started Gone Grazy in 2021 as a way to keep myself even busier during the uncertain pandemic times. I truly enjoy making one-of-a-kind grazing and charcuterie creations, no two are ever the same!"
