'Mouthwatering Tacos' For Joliet: Taco Pros Seeks City Council's OK
The Joliet City Council will vote at Tuesday's meeting whether to approve a special use permit so Taco Pros can build a drive-thru window.

JOLIET — If you were hoping Joliet would continue to bring more new restaurants to the growing city, your elected officials are doing what they can to make you happy.
At Tuesday night's meeting, the Joliet City Council will vote whether to approve a special use drive-thru permit so that Taco Pros can expand its restaurant chain by adding a new restaurant along Plainfield Road, just up the street from the Denny's Restaurant.
The address for the future Taco Pros will be 2565 Plainfield Road, which is Route 30. According to city documents, Taco Pros will be one of the tenants in the future Speed Trek gas station that will be built on the property.

According to the company's website, "Our journey first began in the spring of 2019 in a small space in Oak Park, IL, where we quickly expanded our retail space, doubling our original size. Co-founder Bhagyesh, and Master Chef Cesar and Victor, who have a combined 25 years of experience delivering authentic flavors to their customers, had a collective passion for creating quality food and great service.
"Ultimately, this led to creating the brand under the name Taco Bros. After years of building our craft, growing our team, we decided to change our brand name to Taco Pros to accommodate the various changes we were experiencing."

There are 14 existing Taco Pros plus another dozen listed on the website as "coming soon." The Joliet concept is not listed as one of them, yet.
However, several top city leaders, including city manager Beth Beatty, are urging the Joliet Council's approval. At the bottom of this story, Joliet Patch has posted copies of letters from the city manager as well as Christopher Starke, the Taco Pros project manager, explaining more details about his project.
According to Starke's letter, "Taco Pros is an independent restaurant with various Chicagoland locations. Our menu offers something for everybody, from the mouthwatering tacos to the inconceivable burritos. Our food is made fresh and authentic to guarantee flawlessness and is expertly cooked by our finest chefs."
