Out-of-the Box Ideas for the Generous Tomato Harvest

For some gardeners, it happens every year, their tabletops, then windowsills then countertops gradually are buried in with a stack of fresh tomatoes. But other gardeners are reporting that the tomato crop this year is especially fruitful. But after you slice tomatoes for salads or BLT sandwiches, cook them down to eat with pasta or make homemade salsa, what is left? With a little creativity, there are a lot of options.

Here are our top five picks from a list of 25 by Southern Living:

  1. Salsa with a twist - Sure, you could make salsa with tomatoes, onions, cilantro and lime, but you probably already have this season. We recommend to give it a new twist. We like the watermelon-peach salsa with tomatoes that we found here.
  2. Since you already bought the watermelon - make a sorbet. Yes, with tomatoes. Check out the recipe.
  3. Keep the kitchen cool and cook 'em outside - Fire grilled? That always makes food better. And tomatoes, we are guessing, are no exception.
  4. A different kind of tomato sandwich - Add an egg and a tasty spread and you have a new twist on an old favorite.
