Tinley Brewery, Tap Room Bring Back Christmas Cookie Beer For Charity

TINLEY PARK, IL — A Tinley Park brewery and tap room have partnered in stirring up the holiday spirit, with the return of a beer inspired by cookies left for the big guy in the red suit—and with a local charity in mind.

Flipside Brewing and The Open Bottle on Saturday will bring back their specialty beer "Santa's Midnight Snack," with a portion of sales going to local charity Tinley Wish.

Flipside owner Erik Pizer said he recently learned that Santa's favorite cookie is a classic like the jolly guy himself—a chocolate chip cookie.

"We took an Imperial Milk Stout base, added brown sugar, vanilla, and a bunch of chocolate to make it as close to a chocolate chip cookie as we can," Pizer said.

The finished product is a deep chocolate-y, frothy brew with an ABV of 10 percent set for release on Saturday, Dec. 14.

"Big, rich, velvety smooth," Pizer said. "Lots of chocolate and fudginess up front, with brown sugar and vanilla behind it, giving the impression of a chocolate chip cookie."

Pizer and The Open Bottle owners Patrick and Julia Bisch will feature the beer on draft and in bottles at Flipside, 7144 183rd St., and both locations of The Open Bottle, 7101 W 183rd St #105, in Tinley Park, and 16437 W 159th St., in Lockport.

The businesses will donate $1 of every bottle sold to Tinley Wish, a nonprofit organization focused on helping Tinley Park families who are facing difficult situations during the Christmas season.

The release is set for Saturday at 11 a.m. Santa will visit Flipside from 2 to 4 p.m.

Friday The 13th Brew

In honor of a Friday the 13th in December, Pizer has brewed an English dark mild called "Haunted Past." Pizer will tap a cask at 13:13 military time, or 1:13 p.m., to celebrate.

Flipside Holiday Bazaar Back

Flipside Brewing is bringing back its Beers, Burgers and a Holiday Bazaar this Sunday, Dec. 15, a chance to shop local and enjoy their famous smash burgers and craft brews. With 14 talented local artists showcasing handmade creations, the artisan market is a stop for holiday shoppers seeking one-of-a-kind gifts.

The Holiday Bazaar runs from 11 a.m. to 5 p.m. The event is free to attend, family-friendly, and offers ample parking in the shopping center lot. Curated by John E. Streetz of the Streetz Artz Alliance, the market features a mix of returning favorites and fresh faces, ensuring a vibrant and diverse lineup of artisans.
