Murray State University's dining scene has welcomed a new addition that's about food and environmental responsibility. Pony 2.0, the latest venture by Racer Dining by Sodexo, is not your ordinary food truck. It's an electric vehicle (EV) that runs on a sustainable mission, offering a diverse breakfast menu while reducing carbon emissions on campus.
"We are excited to introduce Pony 2.0 as part of our ongoing commitment to environmental stewardship," says Meagan Hart, Racer Dining Marketing Manager. "This initiative aligns with both Murray State's and Sodexo's focus on reducing our carbon footprint."
Operating on a set schedule from Monday to Friday, Pony 2.0 serves as a mobile concession stand during sports events, adding convenience and flavor to the game-day experience. Lisa Winchester, with 24 years of experience at MSU/Racer Dining, leads the Pony 2.0 operations, ensuring that every meal served reflects the commitment to quality and sustainability.

The menu at Pony 2.0 features a range of breakfast options, including hot sandwiches, fresh fruit, yogurt, muffins, and beverages like coffee and juice. What sets Pony 2.0 apart is not just its culinary offerings but also its payment flexibility, accepting campus cards, credit cards, and cash.
"This isn't just about food; it's about fostering a culture of sustainability and responsibility," notes Cynthia Parrish, the operations manager behind Pony 2.0's schedule and menu development. "We want to engage our community in conversations about how dining can be both delicious and environmentally conscious."

The official launch of Pony 2.0 on March 25th, 2024, marks a significant step in Murray State University's journey toward a greener campus. Students, faculty, and visitors alike can now enjoy a flavorful breakfast experience that also contributes to a cleaner environment.
"Serving at Pony 2.0 gives me the opportunity to meet more students, faculty, and staff, which is what I love about my job in the first place," remarks Lisa Winchester, reflecting on her role in this innovative dining concept.
