New Nantucket Steakhouse Names Executive Chef

The move comes roughly a month ahead of an anticipated June opening for the new steakhouse and martini bar.

NANTUCKET, MA — A new steakhouse and martini bar concept set to open on Nantucket is making progress toward that goal.

Billie's, an American steakhouse and martini bar, will open this summer at 20 Broad Street. The restaurant is expected to open in mid-June and, this week, named an executive chef.

Chef Steve Rhee is expected to bring "a bold, globally inspired perspective to the heart of island dining," officials said.

A California native raised in a Korean household, Rhee draws upon influences ranging from the vibrant flavors of Los Angeles to the refinement of Mediterranean and Asian cuisines. After earning his culinary degree from the California School of Culinary Arts, Rhee cut his teeth at top kitchens in LA before rising through the ranks in Las Vegas, most notably at N9NE Steakhouse and Estiatorio Milos at The Cosmopolitan.

His journey led him to Miami, where he oversaw kitchen operations at Estiatorio Milos and later helmed the kitchens of Terrazza at the Shore Club and the waterfront favorite Kiki on the River, known for its fresh seafood and high-energy dining experience.

“I’ve always been drawn to the energy and creativity that come with opening a new restaurant,” said Rhee. “With Billie’s, we have the opportunity to blend classic steakhouse flavors with the coastal spirit of Nantucket in a way that feels fresh, exciting, and welcoming. I can’t wait to share what we’re working on.”

The space previously operated as the beloved local restaurant Dune, which was sold in 2024 after 16 years in business.
