Ice Cream 'Metropolis' Plans New Sudbury Location

SUDBURY, MA — Sudbury residents may soon get to taste some of the best ice cream in Massachusetts — without having to drive to either Hudson or Cambridge.

New City Microcreamery, founded in Hudson in 2015, is planning to open its third shop in Sudbury at the Whole Foods plaza, according to plans submitted to the Select Board.

The 2,000 square-foot ice cream shop would take over the former Peets Coffee shop near the corner of Boston Post Road and Bay Drive, according to plans. The shop would also include an outdoor patio area along Bay Drive.

The Select Board on Tuesday night approved the creamery's victualler license, paving the way for the store to open soon.

New City describes itself as a "metropolis of fine confections" and uses a special process to craft flavors like Mexican chocolate, peanut butter banana fluff and lemon poppy seed.

"We use a liquid nitrogen process to freeze the cream. After the scratch ice cream base has steeped in its flavor for 24 hours in our walk-in refrigerator, we pour it into our mixer," the company describes. "First, we slowly move the base and introduce the liquid nitrogen, which is more than negative 300 degrees and freeze the base. We then increase the speed on the mixer to aerate the frozen cream and give it its lighter texture and mouthfeel. Using the super-cold liquid nitrogen creates a smaller ice crystal which gives it the smooth New City texture we look for."

The company is owned by three local businessman who own the existing New City ice cream shops in Hudson and Cambridge, a Rail Trail Flatbread Co. in Hudson and the Less Than Greater Than restaurant in Hudson. MassLive rated New City the best ice cream in Massachusetts during a 2018 taste-testing.
