SUDBURY, MA — A company tied to a longstanding Sudbury Mexican restaurant has filed plans to build a new restaurant at the same site along the Boston Post Road, bringing a new dining option to town.

The Sudbury Planning Board in June will hold a hearing to discuss plans filed by Red Bear LLC to build a new restaurant at 694 Boston Post Road, where the Acapulcos restaurant stood for more than two decades. The building was demolished in 2022.

Red Bear LLC manager Steven Ross, an attorney and owner of QS Lending in Natick, said he has lined up a tenant for the site who will open a new outpost of the local Sol De Mexico restaurant chain.

Ross said with approval from the town this summer, he hopes to begin construction and have the new Sol De Mexico open possibly as soon as Thanksgiving. Sol De Mexico operates other restaurants in Natick, Milford, Taunton and Bellingham.

The Sudbury Acapulcos was part of a small chain of Mexican restaurants with locations in Beverly, Milford, Norwood, Franklin, Enfield, Conn., and Stratford, Conn. The Sudbury restaurant closed in July 2021.
