Hazel hopes her students continue to think about the environment after they graduate.

Why go green? “I’m really concerned about our health—the condition of our food, our water, the air,” said Hazel, who has been a vegetarian since the 1980s.
“I just want all of that to be cleaner and purer,” she said. “It’s just part of what I think is important about our lifestyle and quality of life."
