McKnight and her husband, Anthony, along with three other cooks (Chef Walter, Chef Rob and Chef Aaron) prepared meals in the days before Thanksgiving at two local unused commercial kitchens, one in Bayonne and another in Jersey City. More than 200 volunteers registered to help pack the meals in containers, and then deliver them to the homes of seniors throughout Hudson County. McKnight is baking macaroni and cheese, while her husband Anthony is prepping the turkey and stuffing. Other offerings on the menu include rice, gravy, string beans, cranberry sauce and water.
“This event is so amazing every year. We have hundreds of volunteers, and we are feeding over a thousand seniors, so it’s like heaven for me,” says McKnight. “I’m cooking, my husband is cooking, and we have three great chefs helping us. The small business community has been very helpful with donating space for us to cook, and we couldn’t do it without the many donors who provide support to AngelaCARES for this event. I’m so grateful for all of them this Thanksgiving,” adds McKnight.
