Produce Sales Today: What's Good in August?

Our friends over at Grow it Green Morristown, which maintains this little slice of farmland behind the Lafayette Learning Center at 31 Hazel St., will have open produce sales today at 5:30 p.m. And, in August in New Jersey, here are five items you can hopefully expect.

- You Need to Know About Cucumbers: According to World's Healthiest Foods, cucumber flesh is a good source of Vitamin C, while the tough skin is high in fiber. So, don't peel it off! Cukes are great on a sandwich with some cream cheese, in salad, or even mixed with your favorite juice blend!
- You Need to Know About Tomatoes: Ah, the coveted Jersey Tomato. Besides being far more abundant in flavor when just-picked, tomatoes also are exceptionally high in Vitamin C, as well as a good source for the antioxidant Lycopene. Plus, how else are you going to make a delicious Caprese Salad?
- You Need to Know About Green Beans: If your only experience with green beans was the nasty ones that came out of a can when you were a kid, you're in for a treat. Seriously! Green beans are a great, extremely healthy snack that can be eaten raw with a simple and delicious garlicky hummus (which, is also growing at the Urban Farm. The garlic, not the hummus). They're even replacing lemonade as the top-seller among young entrepeneurs, apparently.
- You Need to Know About Zucchini: Also called "Summer Squash," this is one versitile vegetable. Stir-fry it with pasta, garlic, olive oil, basil, and finish with some fresh cracked pepper and a little shaving or three of a hearty parmesan, and you're set. Like green beans, cutting these antioxidant storage units raw and dipping them in some nice hummus isn't bad, either!
- You Need to Know About Swiss Chard: Eat up, eat often and eat a lot of this beautiful leaf. Swiss Chard is absolutely exploding with Vitamins K, A and C, among other benefits, and are best when paired with some olive oil, lemon juice and salt. That's it! Enjoy!
