The Royal Waffle: Have Food, Will Travel

This Mine Hill-based family food truck is mostly camped out at Speedwell Lake, but Patch caught up with them recently during a family fun event at Alfred Vail School.

If there's one thing Morristown is known for, besides its deep history, is its many, many (many) dining options.

We have steaks, seafood, Chinese, Italian, Persian, Afghani, Indian, Japanese, American, French, Irish ... and waffles.

If you drove by Speedwell Lake recently, or happened to be venturing down Patriots Path, you might have noticed a big yellow food truck stationed near the old fire pit.

That truck, The Royal Waffle, is owned by husband and wife team Agnes and Thomas Briganti, who is a former landscaper of 35 years. After the years of stress and hard work in that business, Thomas Briganti decided to take on the stress and hard work of the food service industry, which he said had been a lifelong dream.

"I always wanted to do this, since I was a kid," said Briganti as he served up waffle sundaes and hot dogs earlier this week at Alfred Vail School during a family fun event.

So, not only is this Mine Hill-based business able to call Speedwell Lake in Morristown home, it also travels.

Besides the Belgian waffle treats, which Briganti makes in-house, there are a number of other food truck staples, from breakfast items to burgers, cheesesteaks to hot dogs to those "Fat" sandwiches that Rutgers University's food carts made so popular several years ago.

As the line continued to grow on the Alfred Vail playground, it was obvious Briganti's decision to change careers was paying off.

The Royal Waffle is open at Speedwell Lake, on the corner of Speedwell Avenue and Cory Road, from 11 a.m. to 5:30 p.m. Tuesday through Sundays. For more information, visit their Facebook page.
