New Cookie Store To 'Chip-Ify' Fun, Creative Flavors In Ridgewood

Chip City Cookies, a fast-growing New York company, is replacing Ice Cream by Mike at 305 Ridgewood Avenue.

RIDGEWOOD, NJ — Starting organically in 2017 as only a side hustle, Chip City Cookies, which is opening its 14th location this weekend on the Upper West Side, has transitioned into a full-time business for co-founders Theodore Gailas and Peter Phillips.

Now, the friends turned business partners are eyeing another location for their high-quality cookie store in Ridgewood, and expecting a grand opening soon at 305 East Ridgewood Avenue, which was previously occupied by Ice Cream by Mike.

Ridgewood, Gailas said, will be one of Chip City's first New Jersey locations, as the franchise seeks to expand to a new state. He added that the village has the feel of a close-knit community and is similar to other locations it has opened in, and that he hopes it will help the business sustain momentum.

Since 2017, he said, Chip City has worked to evolve the brand and perfect the craft, and now he feels as though he and Phillips have something very special.

"(Chip City) likes to keep it fun and creative and 'chip'-ify flavors that we think everyone will like," Gailas said.

Each week, he added, store customers can expect to see new flavors with its rotating offerings, which feature classic favorites, and seasonal and specialty varieties — many of these will have a filling.

"We take pride in serving cookies that are delicious, perfectly baked and served warm," he said.

Chip City's rotating menu includes, yet is not limited to, the following: blueberry cheesecake, apple pie oatmeal, s'mores, Funfetti cake, Italian rainbow and strawberry shortcake.
