Doria's Pizza In Summit Faces Staffing Issues, To Close Tuesdays
Due to staffing issues and the declining health of owner John Grassi, Doria's Pizza is temporarily closing on Tuesdays.
SUMMIT, NJ — Doria's Pizza has been serving pizza pies and classic Italian food to the Summit community for 37 years. The restaurant has now hit a bit of a road bump.
Due to staffing issues, but mostly due to the declining health of owner John Grassi, the Italian restaurant posted on Facebook Tuesday that it is closing, for now, on Tuesdays starting July 16.
The restaurant will be closed on Tuesdays until further notice to give the Grassi's more family time and to secure additional staffing, according to the announcement.

John Grassi is commonly known to locals as the "humble, bubbly pizza man of Summit," the restaurant wrote. Grassi was also recently diagnosed with Frontal Temporal Dementia.
"Our treasured family recipes will still be carried on and cooked to perfection for what it is known for," Doria's wrote on Facebook. "We have spent the last year training and preparing our staff."

The restaurant added, "John is a pillar in Summit, and you will continue to see him day in and out at the pizzeria, as it is second nature to him."
In the event that customers need food prepared for an event on a Tuesday, the restaurant encourages people to call the day before and special accommodations will be made.
Doria's Pizza is typically open seven days a week. A job listing for a part-time pizza maker, among other positions, are posted on the restaurant's Facebook page.
According to its website, Doria's was first established by the Grassi family in 1986. Their mission was to serve "real pizza" just like they had in Italy.

The pizzeria is located at 432 Springfield Avenue and is available for dine-in, take-out and delivery.
