Faro Becomes First Bushwick Restaurant Ever to Get a Michelin Star, Owner Says

BUSHWICK, BROOKLYN — Faro became the first Bushwick restaurant to win a Michelin star Wednesday, and its chef and owner Kevin Adey hopes the national award will bring people back who tried Faro a year ago, when it was sorely understaffed, and weren't so pleased, he told Patch.

"I'm pretty stoked," Adey said. "And for the neighborhood, it's pretty cool, because we're the first ever restaurant in Bushwick to get a star."

Some Bushwick residents might not know that Faro has gone through lots of changes in menu and organization over the past year. When Faro first opened in May 2015, they were serving 10 pasta dishes, all of which featured extruded pastas (aka, pastas shaped with a pasta maker), Adey said. Now, the restaurant serves significantly more pasta dishes — all of them handmade.

"To be totally honest, we're a totally different restaurant than when we opened, so I hope people who came in the beginning who may or may not have been super psyched about it will give it another chance," Adey said.

The menu features gnocchetti, cavatelli, scarpinocc and several other types of pasta you've probably never heard of but sound super doughy and delicious.

Adey said that at the beginning of any operation, it's difficult to train all the staff to make pasta just like the head chef does. But after months of working, his staff is robust and adept: "We have enough people to make the dream work," he said.

Asked why he believes Faro was able to rise above the competition, Adey said: "I woke up every day for the last year and a half with a singular vision. This was it. Maybe it was the power of positive thinking, and actively working every single day, that did it."
