Queens Eats: Bacon Chicken

This tasty dish was inspired by a wedding gift.

It’s hard to believe, but in less than two weeks time, my husband and I will be celebrating our first wedding anniversary. 

After 10 years of dating and half that time being engaged, we already feel like an old married couple, but it’s still surprising to think how time flies. 

With our first anniversary approaching comes the end of one of our more memorable presents—a subscription to Amazing Gifts, through which we received a different gourmet food item—from wine and beer to cheese and bacon—every other month. Sigh—I’m very sad to be nearing the end of this tasty treat delivered to our door every other month. 

For our last installment, we received two gourmet varieties of bacon, so naturally, I went looking for recipes that call for a sweeter variety of bacon (the one that I used is apple-smoked). 

I found a recipe for Bacon Chicken, which is heavy on the flavor with cheese, onions and garlic, on the Busy Cooks section of About.com. I served the chicken with Roasted Brussels Sprouts, which are surprisingly easy to make. For the latter, rinse and slice the Brussels sprouts in half, drizzle with olive oil, salt and pepper and then bake on 400 for 35-40 minutes.

Note: The following yields six servings. Reduce ingredients accordingly to make less. 

Ingredients       

6 slices bacon        
1 Tbsp. butter        
1 Tbsp. olive oil        
6 boneless, skinless chicken breasts        
1 onion, chopped        
3 cloves garlic, minced       
1/2 tsp. salt        
1/8 tsp. pepper        
1-1/2 cups shredded cheddar or colby cheese 

Preparation 

Cook bacon in 12-inch skillet until crisp for about 4-6 minutes. Crumble bacon and set aside. Pour bacon grease out of skillet, but don't wash or wipe it. Add butter and olive oil to skillet. 

Saute chicken breasts in this mixture over medium heat, turning once, until chicken is almost cooked and just barely pink in center. The internal temperature should be 155 degrees F. This should take 8-10 minutes. Place chicken in ungreased 12-inch-by-8-inch baking dish. Cook onion and garlic in drippings remaining in skillet. 

Cook until onion is softened, then stir in salt, pepper and cooked bacon. Spoon over chicken breasts and sprinkle with cheese. Bake at 350 degrees for 10-15 minutes or until chicken is thoroughly cooked and cheese is melted.
