NEW YORK CITY — The Empire State Building is now home to a new Japanese restaurant and omakase bar
Sushi Beauu opened to the public on Wednesday and is being spearheaded by Keisuke Kasagi, a Hokkaido-born, New York–based hospitality veteran known for some of the city’s renowned Japanese dining destinations, including The Izakaya, Dr. Clark and the former Gouie New York.

Kasagi along with Executive Chef Tetsu Kaminakaya have created a value-driven premium omakase experience, showcasing two tiers: the Classic at $100 and the Seasonal at $140.

Tetsu will source fish both locally and directly from Japan, Kasagi told Patch.
Sushi Beauu will also offer an 18-course omakase. The meal opens with an amuse-bouche from the chef, which will rotate depending on seasonal ingredients; currently offered is Monkfish Liver with ponzu.

Of the 9 Nigiri selections, highlights include:
• Seabream, lightly brushed with Chef’s proprietary soy sauce
• Ebi, with ebi-miso paste
• Barracuda, torched, finished with a squeeze of lime and a pinch of salt
• Torched Mackerel, tightly wrapped and shaped into a beautiful, seamless log
• Tamago, prepared fresh before your eyes. This style is unique as it features a core of seasoned sushi rice (shari) nestled inside the sweet omelet.

To provide a pause between the nigiri progression, a warm Egg Custard is served. This creamy custard features mochi (Japanese rice cake) with eel and mushrooms, topped with ikura and green onion.
Lunch, dinner à la carte and a complete breakfast will be offered at the restaurant.

Sushi Beauu’s interior design was done by Japanese designer Yuta Tsuchiya and furnishings from Finland-based Made by Choice.
The restaurant will be open from Monday, 10 a.m. – 3 p.m., and Tuesday – Sunday: 10 a.m. – 3 p.m., 5 p.m. – 9 p.m.
