Chicken and Rice in the Slow Cooker

Another great recipe for the long winter ahead.

Still no snow in sight, but it feels like its coming. And when it does, you want some recipes you can coop up with.

Here’s an easy way to make a delicious dish of chicken and rice in the Crock-Pot.

INGREDIENTS:

  • 1 pound of boneless chicken breasts
  • 32 ounces of chicken stock.
  • 2 cups uncooked rice
  • 1 cup water
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • ½ cup diced celery

DIRECTIONS:

  • Pour the chicken stock, rice and water in the slow cooker. Add the chicken then sprinkle in the salt, pepper and paprika. Then add the celery.
  • Cover the crock and cook on low for 6 to 8 hours.

This recipe will serve 4 servings.

Cook over night so you can have a nice hot meal waiting for your Thermos for lunch.
