POLL: What Should Replace Chichen Itza?

The Mexican eatery on Merrick Road, Chichen Itza, recently closed its doors as well as the business adjacent to it.

That strip of businesses on Merrick Road west of South Village Avenue has recently undergone a facelift with new facades and lighting. The two vacant storefronts puts a sour note on the newly renovated strip of RVC commerce.

What do you think should replace it? Do you think a potential business owner should buy both properties and create one large store (like what Kasey's and Cabo did on Park Avenue)? Or do you think two separate businesses should open in the two vacant storefronts?
