Michelin-Star Chef To Partner With The Met

Chef John Fraser collaborated with the museum's restaurant, The Dining Room, on five new menu items and new cocktails.

UPPER EAST SIDE, NY — A Michelin-star winning chef is bringing his culinary expertise to one of Manhattan's biggest art museums.

Chef John Fraser has collaborated with the Metropolitan Museum of Art to bring five new menu items to the museum's restaurant, The Dining Room, the museum announced. The new offerings debuted this week.

The chef, whose Greenwich Village eatery Nix was awarded one Michelin star, said that the new menu items are meant to pair with the "artistic experience at The Met."

"As a long-time visitor and devoted fan of The Met, I am honored to share my culinary vision with the guests of The Dining Room," Fraser said in a statement. "Pairing my style of cooking with the artistic experience at The Met is a unique and refreshing new challenge. I hope these dishes will provide a deeper, all-encompassing experience for all visitors."

Fraser's contributions to The Dining Room's menu will rotate seasonally and focus on one ingredient, museum officials said. In addition to the five seasonal dishes, Fraser's bar director Salvatore Tafuri will introduce new cocktails to the restaurant.

The Met's restaurant, The Dining Room, opened up reservations to the public in 2018. The eatery was previously reserved only for museum members.

"Our culinary partnership with John expands upon this declaration through the presentation of his cuisine, while his menu at The Dining Room expands upon the current dining culture in New York City,"Ed Brown, President of Restaurant Services for Restaurant Associates, said in a statement.

Dishes for the winter season all feature mushrooms. Check out the new offerings below:

  • Royal Trumpet Carpaccio: Fennel barigoule, shaved parmesan, wild arugula
  • Chanterelle Polenta: Acorn squash fricassee, poached hen egg, winter truffles
  • Wild Mushroom Galette: Roasted prime rib, escarole, fresh horseradish
  • Steamed Bass: Wild mushroom bouillon, pickled hon shimeji mushrooms, soft herbs
  • Porcini Pavlova: Vanilla cream, chocolate pudding, cocoa crumb
