West Village French Eatery Added To Michelin Restaurant NY Guide

A fine-dining French restaurant that opened in July 2021 was just unexpectedly added to the coveted Michelin New York Guide.

WEST VILLAGE, NY — Michelin, the world's most coveted restaurant guide, just unexpectedly added six restaurants to its 2021 New York Guide, and one of them is a new upscale French eatery in the West Village.

The news comes after Michelin recently said that it would begin announcing a portion of its NYC selections throughout the year, opposed to its standard annual list.

The inaugural set of midyear announcements by the Michelin inspectors included Les Trois Chevaux, located at 283 West 12th Street.

Here's what the Michelin inspectors had to say about the West Village French spot that opened in July 2021:

"The decadent cooking at The Beatrice Inn, which catapulted Chef Angie Mar to fame, is perfectly translated at her latest venture, which fittingly brings to life fine French cuisine in the form of fish and fowl. What follows are a series of top-shelf plates, including cuisses de Grenouille (frog’s legs with crispy artichoke hearts, all set in a wonderful Champagne-beurre blanc)," Michelin wrote about the restaurant.

"By revealing some of the new additions made by our inspectors throughout the year, we enhance our digital tools to further strengthen the ties that bind us to food lovers," said Gwendal Poullennec, international director of the Michelin Guides, in a news release.

Les Trois Chevaux describes itself on its website as the embodiment of "a renaissance of the great French restaurants of New York's eras past, while also looking to the future of dining."

In Chinese, "Mar" (the name of the owner/chef) represents the noble steed, and when she was young, she and her two brothers were nicknamed "The Three Horses," which is where the Les Trois Chevaux name comes from.

Guests are expected to arrive in proper dinner attire, and while ties are not required for the main room and bar, the restaurant requests that dinner jackets are worn by patrons. Blue jeans, shorts and sneakers are strictly prohibited.
