Health Department Shuts Down Brookline Bar-Restaurant

BROOKLINE, PA — The Allegheny County Health Department has ordered the closure of Proof Bar & Grill on Brookline Boulevard.
According to a Friday inspection report, Proof was shut down because of unpaid civil penalties, unpaid permit fees and inadequate food refrigeration. The establishment also was operating without a valid county health permit.
An inspector found shrimp, cheese, bacon, egg rolls, raw ground beef and other foods that require refrigeration stored at between 47 and 51 degrees. Such foods must be stored at a temperature of 41 degrees or lower.

A black, mold-like substance was found in the ice machine.

There was no date marking system in place for prepared foods held over 24 hours. Regulations require such foods be labeled with a use-by date of seven days, including the first day of use.
The restaurant is required to display a closed placard, which is posted when an imminent health hazard is identified and for rules and regulations violations such as operating without a valid food permit. It's unlawful to operate a food establishment with a closed placard.
It is unclear when - or if - Proof will reopen.
