NEW HOPE, PA — After 15 years in business, New Hope’s "pure vegetarian" restaurant - Sprig & Vine - is closing its doors.

Chef and owner Ross Olchvary posted the news on Facebook this week.

“Sprig & Vine will be closing on Sunday, October 19, and we’d love to see you one more time. After that, we may have limited offerings or pop-ups depending on our staffing. Stay tuned," said Chef Ross.

Since March 2010, the Union Square eatery has served nearly half a million vegan meals, according to Chef Ross. "Unfortunately, we’re at a point where it’s no longer financially viable to continue. We reached that point a while ago, but pushed on because we passionately believed in our vision. Your love kept us here, but we could only go so far before the financial toll forced the painful decision to say goodbye. We’ve dug a deep hole trying to stay afloat and we can use your help in closing this chapter.”

Chef Ross is asking customers and friends to consider visiting and sharing their GoFundMe page “to help close this chapter with dignity by helping cover closing costs, bills, debt, final payroll and additional funds for staff.

“To our employees: I’m proud of the welcoming, positive atmosphere and lifelong friendships we’ve created. I couldn’t have done this without you and it’s been an honor to work with you,” Chef Ross posted.

“To our guests: Thank you for being part of our story. It’s been our pleasure to serve you. And to our loyal regulars: Thank you. You know who you are. We won’t forget you, and we’ll miss seeing your faces every week.”

Anyone who has a gift card should use it by October 19. For a refund, contact Sprig & Vine. If you don’t plan to use your gift card, contact the restaurant, "as we’re trying to track remaining open gift card balances."

According to Chef Ross, Sprig & Vine is technically for sale and its space is available for rent, “so if you know someone who’d like to put in the time and effort to continue to run and grow Sprig & Vine or another concept here, reach out ASAP!

“There were restaurants before us and there will be restaurants after us,” said Chef Ross. “I hope we’ve inspired a chef or entrepreneur to go out and open their own restaurant someday to keep the spirit of Sprig & Vine alive.”
