Recipe of the Week: Eggplant Spaghetti Dinner

Have some leftovers? Here's a simple twist on a simple meal.

After a recent batch of the recipe I made left me with two leftover eggplants, I came up with a great way to use them with some simple ingredients.

This one isn't so much of a recipe as it is a way to creatively use some leftover pieces from a previous meal we shared here just a couple of weeks ago.

Eggplant Spaghetti Dinner

What you need:

  • Spaghetti
  • Eggplant
  • Jar of Marinara sauce
  • Parmesan cheese
  • Fresh oregano
  • Pepper
  • Garlic salt
  • Salt
  • Butter

Cut the eggplant into circle-sized slices. Throw some butter onto the skillet, season the eggplant to your liking, and lightly brown on each side. Set aside.

Cook the spaghetti and heat the marinara sauce. Afterwards, place the spaghetti on the plate, followed by as many eggplant slices as you'd like. Then, pour sauce on top of the eggplant. Lightly sprinkle fresh oregano on top after adding Parmesan cheese.

Serve and enjoy!
