Health Inspection: Chris's Diner

The following inspection was performed on Oct. 9 at Chris's Diner in Portsmouth. 

No bare hand contact with ready to eat (RTE) foods. 

Inspector Comments 
An employee was observed touching ready to eat food (corn muffin)with bare hands. Food employess must not touch exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, single use gloves or dispensing equipment.14Food-contact surfaces: cleaned & sanitized 

Inspector Comments 
Equipment and utensils were not being properly washed, rinsed and sanitized. A 3-bay sink with proper set-up was done with inspector and procedure was explained to staff. Copy of sink set-up given as well.14Food-contact surfaces: cleaned & sanitized 

Inspector Comments 
The slicer had an accumulation of food and debris. The food contact surfaces of equipment must be clean to sight and touch. Slicer MUST be thoroughly washed, rinsed and sanitized.19Proper hot holding temperatures 

Inspector Comments 
Potatoes were held at (118) degrees. Potentially hazardous food must be maintained at 135 degrees F or above except during preparation, cooking or cooling. Potatoes had just been removed from grill, placed back on grill and temped at 188 by end of inspection.37Contamination prevented during food preparation, storage & display

Hand sink is located next to 3-bay sink, exposing cleaned dishes to splash. Splash guard is required on hand sink.46Warewashing facilities: installed, maintained & used; test strips 

Inspector Comments 
The facility is lacking test strips to measure the concentration of the chlorine sanitizing solution for the 3-bay sink.47Non-food contact surfaces clean 

Inspector Comments 
The nonfood-contact surfaces of the inside of the steam table unit has an accumulation of dust, dirt, food residue and other debris. This must be thoroughly cleaned and sanitized.47Non-food contact surfaces clean
