Health Inspections: Clements' Market, Melville Grille

The Rhode Island Health Department noted the violations at the following Portsmouth establishments in June:

Clements' Market - The following violations were noted during an inspection on June 18.

  • Food items packaged in the food establishment are lacking labels. Food packaged in a food establishment must be labeled with the common name of the food, a list of ingredients, the quantity of the contents and the name and place of the business. Some items have had the proper labels added and the rest are in the process of being updated. 
  • The hand sink in the deli is between a prep table and a wrapping machine, exposing these to splash from the hand sink. Splash guards are required for both sides of the hand sink. Splash guards must be high enough to protect the prep table and the wrapping machine from splash from the hand sink.
  • The gasket on the Café/deli walk-in is not in good repair. Gaskets must be replaced.
  • The facility is lacking test strips to measure the concentration of the quat sanitizing solution for the 3-bay sink.
  • The floors in the Deli/Café walk-in refrigerator, the Produce walk-in and back room, and the bakery walk-in are constructed of unsealed cement which is not durable, easily cleanable or non absorbent. The materials for indoor floors must be durable, easily cleanable and nonabsorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators, warewashing areas and toilet rooms. The establishment is in the process of having the floors evaluated and scheduled for repairs.
  • The floor in the Café in the front of the cook line, the tiles on the floor in the front of the deli/café walk-in, and the tiles on the floor in the seafood department near the sink and in the front of the walk-in are worn or in poor repair; which is not smooth or easily cleanable. The materials for indoor floors must be durable, easily cleanable and nonabsorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators, warewashing areas and toilet rooms. The establishment is in the process of having these areas evaluated and scheduled for repairs.
Melville Grille - The following violations were noted during an inspection on June 20.
  • Several raw animal foods were stored above ready-to-eat foods in the refrigerator (such as raw fish over cooked pasta; raw chicken over raw beef). Raw animal foods must be separated from raw ready-to-eat food such as vegetables during storage.
  • The can opener and the slicer had an accumulation of food and debris. The food contact surfaces of equipment must be clean to sight and touch. Both were cleaned during inspection.
  • A few cases were stored on the floor in the freezer and the walk-in. Food must be stored at least 6 inches above the floor.
  • The gasket located on the ice machine door was not in good repair. This gasket must be replaced.
  • Beverage tubing and cold plates were observed in contact with ice used for drinks at the bar and the service counter ice bins. Beverage tubing and cold plate beverage cooling devices must not be installed in contact with stored ice.
  • A hose is connected to the faucet at the mop sink. This faucet is lacking a backflow prevention device. An approved backflow prevention device is required in order to prevent backflow of a solid , liquid or gas contaminant into the water supply at each point of use at a food establishment.
  • Protective shielding is not provided for the lights in the dry storage area. Light bulbs must be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food; clean equipment, utensils, and linens; or unwrapped single-service and single-use articles.
