Belmont University’s dining team successfully executed an upscale plated lunch for 950 guests at the Curb Event Center, catering a prestigious Pinnacle Bank event featuring guest speaker Peyton Manning.

To ensure seamless service for the large-scale event, Belmont’s dining team brought in additional support from dining teams at regional partner schools, including the University of Alabama at Birmingham (UAB), Austin Peay State University, Trevecca Nazarene University, and the University of Tennessee at Martin. A total of 85 front-of-house and back-of-house staff worked together to deliver an exceptional dining experience.

The menu showcased a carefully curated selection of dishes, including Calabrian Chile Roasted Chicken served with charred broccoli rabe, creamy seasoned polenta with garlic and Parmesan sauce, and a lemon-olive oil vinaigrette. Guests were also served freshly baked rolls with butter and an array of decadent desserts, including double chocolate layer cake and bourbon pecan pie. A vegetarian entrée featured an herb-crusted tempeh steak with wine-braised mushrooms, vegan cheesy polenta, and grilled broccolini.
