ARLINGTON, VA — Arlington County regularly conducts inspections of local restaurants. Reports are generally posted about a week after the inspection. We've listed the violations cited in inspections at local restaurants -- including 15 reported violations at Bar Bao -- on March 15, the most recent date available.

Observation: Stored food is not protected from contamination. Open container of chicken was stored under rack on floor in large walk in.

Observation (CORRECTED DURING INSPECTION): TCS foods in the small walk in were holding at 45F, including whole fish. Call for service placed. Foods relocated to big walk in. The container of garlic and oil was holding at room temperature, 70F. Discarded.
Observation: The nonfood-contact surface of the interior and exterior of cambro units and the exterior of the skillets are not kept free of an accumulation of dust, dirt, food residue, and/or other debris.

Observation (REPEAT) (CORRECTED DURING INSPECTION): The handwashing sink located in the kitchen does not have hot water supply. Plumber has been contacted.
Observation: The ceiling above the service line and cook tops are in need of cleaning.
Observation: Restroom exhaust vents are in need of cleaning.

Observation: A test kit or other device that accurately measures the final rinse temperature of the ware washing machine is not provided.

Observation (REPEAT) (CORRECTED DURING INSPECTION): Several food containers inside the walk-in cooling unit are not covered.
Observation (REPEAT): The inside of the deep fryers need cleaning. The surfaces in between equipment need cleaning.
Observation (REPEAT): All floor corners and edges need cleaning.

Observation (CORRECTED DURING INSPECTION): Uncovered employee drink container(s) observed on the kitchen preparation line.
Observation: Handsink near the cook-line brick oven observed in need of resealing and caulking.
Observation: Exterior surfaces of the dishmachine unit observed in need of cleaning.
Observation (REPEAT): Sides surfaces of the cook-line frying and baking equipment observed in need of cleaning. Kitchen storage shelving throughout the facility observed in need of cleaning.
Observation: Several floor tiles and grouting in the kitchen and warewashing areas observed in need of repair. A few ceiling light bulbs in the kitchen and walk-in unit(s) observed in need of replacing. Cabinet shelving underneath the bar area coffee station observed damaged and in need of repair.
Observation (REPEAT): Areas of the floor surface under and around the cook-line equipment observed in need of cleaning.

Observation: Handle on the back left door of the open display unit observed in need of repair.
Observation: Intake and exhaust HVAC ceiling air vent covers observed in need of cleaning.

Observation (REPEAT) (CORRECTED DURING INSPECTION): Observed the wet wiping cloth for the espresso machine stored on the counter.
Observation: The nonfood-contact surfaces of the cardboard used to seal around the steam table is not corrosion-resistant and nonabsorbent. Remove the cardboard and seal up the steam table.
Observation (CORRECTED DURING INSPECTION): Observed the sanitizer in the wiping cloth bucket to measure greater than 200ppm chlorine. The person in charge adjusted the wiping cloth bucket to measure 100ppm chlorine.

Observation (REPEAT) (CORRECTED DURING INSPECTION): No paper towels provided at the hand sink by the 3-compartment sink.
Observation: The food establishment is not under the immediate control of a Northern Virginia certified food manager.
Bar Bao

Observation (CORRECTED DURING INSPECTION): Raw animal foods are not separated from each other during storage, preparation, holding, and/or display (raw ground chicken above beef in the walk-in refrigerator.)
Observation (CORRECTED DURING INSPECTION): The pork belly and rice that is cooked, cooled, and reheated for hot holding was not reheated so all parts of the food reached a temperature of at least 74ºC (165ºF) for 15 seconds.
Observation (REPEAT) (CORRECTED DURING INSPECTION): Foods inside the "Delfield" prep refrigerator cold holding at the improper temperatures of 51-57 F. Cut leafy greens at 57 F were discarded, foods inside the lower portion of unit were relocated to the walk-in refrigerator. Foods inside the six drawer refrigerator improperly cold holding at 47 F were relocated to the walk-in refrigerator. Some foods in the walk-in refrigerator were cold holding at marginal temperatures of 44-45 F; adjust unit to a colder setting.
Observation: There is no variance granted for the use of food additives or adding components such as vinegar to preserve food and/or to render the food not a time/temperature control for safety food (kimchee observed on the dry storage shelving was discarded.)
Observation: The "Delfield" prep refrigerator is not equipped with at least one integral or permanently affixed temperature measuring device that is located to allow easy viewing of the device's temperature display.
Observation (REPEAT): The "Delfield" prep refrigerator, six drawer refrigerator and the walk-in refrigerator are not properly adjusted to keep foods at or below 41 F.
Observation (CORRECTED DURING INSPECTION): Back bar dish machine found not sanitizing at 50-100 ppm of chlorine; sanitizer exchange with a new bottle, and line was primed.
Observation: The cold water at the hand sink by the three compartment sink is not in good repair.
Observation: The lower level/Washington Blvd. outer openings of the food establishment are not protected against the entry of insects and rodents (air gap in-between doors.)
Observation: Each handwashing sink is not provided with individual, disposable towels; a continuous towel system that supplies the user with a clean towel; or a heated-air hand drying device (back bar.)
Observation: The light intensity is below 50 foot candles where a food employee is working with food (replace burnt out bulbs.)
Observation (REPEAT): There is wall damage in the ice machine closet. The wall and floors are not sealed together in the ice machine closet. The bar's wall and counter-top junctures are not properly sealed together. The raw wood under the bar's counter-tops are not smooth and/or easily cleanable. There are some holes in the kitchen walls and beer lower level storage area that need to be filled in.
Observation (REPEAT): Fruit flies were observed in the premises.
Observation (REPEAT): The floors are not cleaned as often as necessary to keep them clean.
Observation: Employees' personal care items are not stored in lockers or other suitable facilities.
