Ashburn Restaurant Inspections: Lack Of Permit Closes Eatery

ASHBURN, VA—Loudoun Health District officials recently inspected food preparation and storage in Loudoun County. "In our experience, it is unrealistic to expect that a complex, full-service food operation can routinely avoid any violations," according to Virginia Department of Health's website.
Violations noted below—such as the 17 at Udupi Bhavan or the lack of a valid permit at Urban Bar-B-Que (see notes below)—involve those issues that would typically require a re-inspection if not corrected or those that are more likely than other violations to contribute to food contamination. They're divided into two categories:
Priority Observations are those violations such as improper cooking, reheating, cooling, or hand-washing. These violations are known to cause food-borne illnesses. Uncorrected priority observations usually result in a re-inspection. Critical violations are food regulation violations which, if left uncorrected, are more likely than other violations to directly contribute to food contamination, illness, or environmental degradation.

"No priority or critical violations" means that other violations were noted, but do not require re-inspection. "No items found" means no violations were noted for the establishment, according to the health department.

Inspector's note: "A complaint was received stating that the TCS food were being improperly held, the walk in refrigerator was broken and everything is thawed. The PIC informed that said unit was broken a day before (but it smelled like it had been longer). PIC voluntarily discarded all food in the unit. The complainant also provided pictures of single service items being stored in the restroom, dry food, pots and pans stored on floor and prepared TCS food stored at room temperature. A complaint inspection was conducted. Single service items observed being stored in men's restroom. PIC was instructed to remove said items from restroom. As per the PIC the men's restroom is not in use, however they will remove all items from there. Dry food and pots and pans observed stored on floor. Said food, pots and pans shall be stored 6" above floor. Fifteen containers of prepared food such as biryani and chicken registered at 122°F and 134°F on food prep table. Operator instructed to place them in the walk in refrigerator to cool. PIC informed that the facility cannot sell restaurant food in the grocery store and said food shall be held above 135°F or below 41°F. No food observed in the walk in freezer. During the inspection the complaint was found and validated.
