Fly Bait In Pastry Case, Residue In Ice Machine: Ashburn, Sterling Restaurant Inspections
The Loudoun County Health Department found black residue in the ice machine, dishes not sanitized, and more violations.
ASHBURN, VA — Numerous restaurants in the Ashburn and Sterling area recorded violations during health department inspections between Sept. 23 and Oct. 1.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.
Here are the most recent restaurant inspections in and around Ashburn and Sterling, according to the Loudoun County Health Department. Of note, Tous les Jours was found with fly traps containing fly bait in the pastry case. Chili's Grill & Bar was cited for black residue in the ice machine.

On the other hand, Emilio's Brick Oven Pizza had a better follow-up inspection with no violations. The restaurant had a dogs in the kitchen violation that was corrected during the last inspection.

- A container of Bourbon Mayo (9/8) Horseradish sauce (9/7) and chipotle Mayo (9/7) observed within the walk-in cooler past the required disposition date. PIC voluntarily removed the outdated food items. Corrected.
- EHS observed a container of Reduced Oxygen Packaged (ROP) salmon thawing within the walk-in cooler with the vacuum still intact. PIC had all the ROP packages cut open to continue thawing.
- EHS observed several tongs throughout the kitchen area that were "Hanging" off shelving and inappropriately stored. PIC removed these utensils to be rewashed.

- Observed low temp dish machine dispensing chlorine sanitizer at 0ppm. Chlorine sanitizer shall be dispensed for food contact at 50-100ppm.
- There is no covered receptacle in the ladies restroom for the disposal of feminine hygiene products.
- Observed raw wood 4x4 planks used as floor support for refrigeration units behind the bar. Raw wood is porous and not smooth nor easily cleanable.
- Light provided in large dry storage room is insufficient. All canned ceiling lights are not lit with the exception of one. Replace with working bulbs to increase lighting.
