Moldy Produce, Substance In Ice Machine: Ashburn, Sterling Restaurant Inspections

Loudoun County health inspectors found a soil or mold substance inside a restaurant's ice machine, moldy produce and more violations.

ASHBURN, VA — Numerous restaurants in the Ashburn and Sterling area recorded violations during recent health department inspections in July.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected. For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation.

Sometimes these are simple, and violations can be corrected during the course of the inspection. Some common violations may include foods hot holding or cold holding at improper temperatures, foods without dates marked, and sanitizer with improper amounts.

Here are restaurant inspection results in and around Ashburn and Sterling in late July from the Loudoun County Health Department. Of note, Cerritos Pupuseria 2 was cited for a pink and black substance in an ice machine. Health inspectors recommended cleaning to prevent soil or mold. In addition. Gumagumalu Kitchen was cited for moldy cucumbers, which an employee discarded.

Some other common violations were raw foods stored over ready-to-eat foods, undated foods and foods stored on the floor.

  • Observed reach in cooling unit not operating properly. Observed walk in freezer measuring 38F which is not sufficient to hold foods frozen.
  • Observed exposed plumbing with no ceiling tiles in both the bar area and in kitchen area. Observed exposed plywood at ADA countertop and bar seating area.
  • Observed insufficient lighting in bar area due to all lighting not being installed.

  • The person in charge (PIC) was not able to produce a verifiable employee health reporting agreement for each of the food employees. There was only one signed form on file.
  • Raw ground beef improperly stored directly in contact with raw whole muscle beef in the walk in cooler.
  • When tested the low temperature dish machine in the main kitchen registered at 0ppm sanitizer. Wares not sanitized after cleaning and before use. Sanitizer container below the machine was empty.
  • Facility is using time as a public health control for the salsa bar and for the portioned sauces that sit out at room temp for ease of obtainment at the front counter. Facility does not have written procedures on file for use of time control nor were the TCS foods that are being held under time control marked with a time stamp indicating the time at which they were brought out of temperature control. According to the manager on duty the sauces are changed out roughly every hour.
  • The juice labels for the fresh squeezed juice have the incorrect manufacturing address. Juices are made and packaged in this facility however the address on the labels is: 2190 Pimmit Dr. #208 Falls Church, VA 22043.

  • Bowl used as scoop in ready to eat food. Provide scoop with handle. Ready to eat foods cannot be handled with bare hands.

  • Observed time/temperature control for safety foods (TCS) not properly dated for disposition. Foods not labeled include: summer rolls.
  • Ready to eat TCS foods held over 24 hours must be date marked with either made on date or date the food item must be consumed not to exceed 7 days. Manager had staff label these items.

  • Observed several food items stored uncovered in cooler.

  • Lettuce that was prepped yesterday, 7/16 between 1-2 p.m. was found at temperatures of 49-50*F, lettuce and shredded cheese prepped today (2 hours ago) was found at temperatures of 47-49*F in walk-in cooler. PIC voluntarily discarded TCS food that was prepped yesterday. All TCS food that was prepped two hours ago was moved to the walk-in freezer to rapidly cool.
  • Various time/temperature control for safety (TCS) foods (buttermilk, sliced tomatoes, sliced hard boiled eggs, lettuce, shredded cheese, etc.) throughout the facility were found to be cold-holding at temperatures above 41*F.
  • TCS food was found cooling in the walk-in freezer while being tightly closed with a tight-fitting plastic lid on the containers.
  • Equipment and utensils were found being stacked together while wet after coming out of the high temperature dishmachine.
  • Handwashing sink by 3-compartment sink was observed to be leaking when water is running.
  • Ventilation hood above high temperature dishmachine is not sufficient in capacity to keep from condensation from collecting on walls and ceilings in the dish pit and adjacent areas in kitchen.

  • Rear door of kitchen was propped open with a magnetic closing drape. Lower portion of drape is not tight fitting to prevent the entering of pests.
  • Upon entering kitchen EHS observed several employees not wearing hair nets. PIC had employees don hair nets, but was unable to provide beard restraints for employees.
  • Observed inside of prep top tilting lid, food preparation equipment, and storage shelves to have a large build-up of food debris and residue.
  • Mops stored in mop bucket, not allowing them to properly air-dry.
  • Observed employee cell phones and clothing co-mingled with food equipment and utensils.
