Cold Meatballs, Undated Lasagna Reported At Fredericksburg Pizzeria
During a recent visit, a Rappahannock Area Health District inspector reported finding 10 violations at one Fredericksburg pizzeria.
FREDERICKSBURG, VA — Rappahannock Area Health District inspectors found health code violations at four of the 13 food establishments they visited Nov. 3-7.
Vinny's Italian Grill & Pizzeria at 11105 Leavells Road, Unit 1, had 10 violations, which was the most inspectors found among the four food establishments with violations.
The person in charge at Vinny's was unable to provide written procedures for bodily fluid clean up, according to the inspection report. The inspector provided a handout to the person in charge explaining the requirements.

In addition, a container of cooked meatballs in a steam table was being held at too low of a temperature, according to the report. The internal temperature of the meatballs was 130 degrees and the steam table temperature was set at 133 degrees. The person in charged reheated the meatballs to 190 degrees and raised the temperature of the steam table.
The inspector also reported seeing a container of cooked lasagna made two days prior without a date disclosing when it was made or when it should be discarded. The person in charge added a preparation date to it and the inspector told them to set up a date marking system.

During a Nov. 13 followup visit, an inspector reported finding no health code violations at Vinny's.
