Fake Crab Sold As Authentic At Fredericksburg Restaurant: Inspection Report
Rappahannock Area Health District inspectors reported finding violations at two Fredericksburg food establishments recently.
FREDERICKSBURG, VA — Of the five Fredericksburg food establishments Rappahannock Area Health District inspectors visited between Oct. 8 and 14, two had health code violations.
Sushi Kola, at 1811 Carl D. Silver Parkway in Fredericksburg had 55 violations, ranging from employees engaging in various food activities without washing their hands as required and having two pest control devices in the kitchen. One was hanging from the ceiling near the back door, and the other was plugged into an outlet near the sushi station.
The person in charge told the inspector that they had placed the pest control devices themselves, but the inspector informed them that pest control needed to be performed by certified applicators. The person in charge disposed of the devices.

During the Oct. 14 visit, the inspector also found that the restaurant was serving imitation crab meat despite it being described as crab in the menu.
"Through observation and discussion with person in charge the facility only uses imitation crab meat," the report said. "EHS recommends person in charge add asterisk on menu that all crab used is imitation crab meat."

The only other food establishment where inspectors found a violation of the health code was Parkside Elementary School at 5620 Smith Station Road in Fredericksburg.
During an Oct. 10 visit to the school, the inspector noted that the person in charge could not provide a certified food protection manager, as required by state law.
"At least one employee with supervisory and management responsibility and the authority to direct and control food preparation and service shall be a certified food protection manager, demonstrating proficiency of required knowledge and information through passing a test that is part of an accredited program," according to the Code of Virginia.
