Flying Insects, Warm Raw Chicken Found At Fredericksburg Eatery: Inspection

A health inspector reported seeing flying insects and finding food kept at the wrong temperature at a Fredericksburg restaurant kitchen.

FREDERICKSBURG, VA — Rappahannock Area Health District inspectors found health code violations at 13 of the 24 food establishments they visited Nov. 14-21.

During a Nov. 20 visit, an inspector observed several flying insects in the area around the waste oil receptacle at the Sedona Taphouse at 591 William St. in Fredericksburg. The receptacle had a buildup of oil and food debris. Employees were told to keep areas free of food debris and oil buildup so that insects would not be attracted to the area.

The inspector also found a container of sweet cream was being held at 57 degrees in the well next to the ice well in the bar area. The cream had been there for less 4 hours.

"The sweet cream in the bar area was voluntarily discarded, and ice was put into the well for the replacement sweet cream," according to the report. "The bar will keep any dairy that is in the wells in ice going forward."

In addition, the temperature of food being kept in the walk-in freezer, including a large pack of whole beef, raw chicken breast, and bags of raw shrimp, was too high.

The kitchen had received a food delivery about 2-3 hours earlier and the freezer door had been left open. The inspector directed staff to remove the warm items from the freezer and store them in trays of ice to cool them down quickly, until the freezer reached the proper holding temperature.

"The person in charge will speak to the staff to ensure that they are not leaving the door open to the walk-in for extended periods of time," according to the report.
