Clam Shells Reused At Fredericksburg Restaurant: Inspection Report

One Fredericksburg restaurant was reusing clam shells and storing bags of chicken, pork and beef on the walk-in floor, according to reports.

FREDERICKSBURG, VA — Rappahannock Area Health District inspectors reported violations at 13 of the 27 Fredericksburg food establishments they visited Aug. 7-15

While visiting the Feast Buffet at 2388 Plank Road in Fredericksburg, an inspector reported seeing tubs of chicken, pork and beef being stored on the floor in the walk-in cooler. The tubs were relocated during inspection.

To avoid contamination, food must be stored in a clean and dry location, where it won't be exposed to splashing liquids, dust or other contamination, according to the report. Also, food must be stored at lease 6 inches (15 cm) above the floor.

Feast Buffet was also washing and re-using clam shells, according to the inspection report. The person in charge was told they could not be reused.

"Mollusk and crustacea shells shall not be used more than once as serving containers," according to the report.

During an Aug. 12 inspection at Mama's Fried Chicken Co. at 2211 Plank Road in Fredericksburg, an inspector observed a sticky trap with a large number of dead insects hanging from the ceiling over the top of bulk flour containers, one had a cracked top.

The sticky trap was removed and the person in charge would start putting them above the mop sink area near the back door instead, according to the inspection report.
