Capital Chicken had been located at Mount Vernon Plaza in Hybla Valley since 2016. The restaurant specializes in Peruvian chicken — or pollo a la brasa — with a family recipe from Lima, Peru. The owners are Carla and Kevin Alvarado, who continued the family legacy passed on from Carla's father Pedro Giordano, a restaurateur and Lima, Peru. Capital Chicken was opened with the name Limón Pollo A La Brasa before later rebranding.
The restaurant provides Peruvian rotisserie chicken cooked fresh daily over an open flame and combined with a blend of herbs and spices. Chicken can be paired with sides like plantains, fried rice, mac and cheese, black beans, French fries, salad and more. Traditional Peruvian dishes like lomo saltado and bistec a la pobre as well as subs, burgers, sandwiches, burritos, quesadillas and desserts round out the menu.
