Leesburg Health Inspections: Bia Kitchen, Hardware Cafe

Several restaurants around the Leesburg area recorded violations during the most recent round of health department inspections.

LEESBURG, VA — Several restaurants around Leesburg and western Loudoun County recorded violations during recent inspections from the health department. Inspectors conducted the most recent restaurant visits between Sept. 27 and Oct. 3.

COVID-19 restrictions around the state have relaxed, so health inspectors have returned to conduct most restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

  • Tuscarora High School, 801 N. King St Leesburg, VA 20175
    • Date inspected: Sept. 28
    • Total violations: 1
      • Not all employees are informed of their responsibility to report illnesses relating to food to their employer.
  • Hardware Cafe, 131 N 21st St Purcellville, VA 20132
    • Date inspected: Sept. 28
    • Total violations: 6
      • Person in charge not trained in how to set up sanitizer compartment of 3 compartment sink. EHS demonstrated how to set up the sanitizer compartment. The person in charge needs to be informed/trained in the proper way to wash, rinse, sanitize wares.
      • There is no CFPM in this food establishment. Ensure at least one person in charge of the establishment acquire a valid CFPM.
      • Their is no verifiable employee health policy showing the foodhandler(s) in this facility have not been trained in the signs and symptoms of foodborne illness. EHS provided a copy of an employee health policy (1B form).
      • Employee handwash sink is blocked with boxes and other materials, making the handwash sink inaccessible. Employee handwash sinks need to be accessible. PIC removed items to make handwash sink accessible.
      • 6 quarts of 1/2 and 1/2 have exceeded use by date and do not meet Grade A standards. PIC voluntarily discarded.
      • Date marking is not observed on TCS items removed from original packaging. Ensure that all commercially processed RTE time/temperature control for safety (TCS) foods are date marked once opened. The food must be served, sold or discarded within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    • Total violations: 1
      • Sanitizer level at 3 compartment sink is above 400 ppm. Ensure that ppm of quaternary ammonia at 3 compartment is between 200 and 400 ppm. Person in charge stated that the contracted company for chemicals would be contacted to adjust ppm level.

      • Uncovered pre-portioned cups of celery and tomatoes available for self service placed outside of the sneeze guard on the serve line.

      • Wet wiping cloths not being stored in chemical sanitizer. Wet wiping cloths are to be used for wiping counters and other equipment surfaces and are to be held in a chemical sanitizer solution at the appropriate concentration between uses. Corrected at inspection.

    • Total violations: 7
      • There is no employee in this facility with a Certified Food Protection Manager certificate.At least one employee with supervisory and management responsibility and authority to direct and control food preparation and service shall be a certified food protection manager.
      • Employee hand sinks in kitchen are missing paper towels to dry hands with. Provide disposable paper towels to dry hands at the employee handwashing sinks. Person in Charge replenished missing towels at both hand sinks. Corrected.
      • Employee hand sink in bread slicing area is blocked by coffee service equipment. A hand washing sink shall be maintained so that it is accessible at all times for employee use.
      • Shellstock does not have tag attached or within the container of shellstock.Shellstock tags shall remain attached to the container in which the shellstock are received until the container is empty. Tag was retrieved and stored within container of mussels. Corrected at inspection.
      • Bar dish machine in main bar and upstairs bar do not have chlorine. Acquire sanitizer to achieve 50-100 ppm chlorine in both dish machine.Until bar dish machines can sanitizer, glassware needs to be washed, rinsed and sanitized in high temperature dish machine in kitchen to achieve sanitization.
      • Date marking not observed on roasted potatoes, beef soup, mashed potatoes. Mark the name and ""consume by"" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days.
      • Toxics being stored above 3 compartment sink where foods are prepped. Store toxics away from or below food items.
  • Georgetown Cafe / Kings Court, 19 S King St Leesburg, VA 20175

    • Total violations: 1
      • At follow-up inspection, the dish machine has not been repaired. An out of order sign is on the dishwasher. Per Person In Charge, facility is awaiting a part to repair the dish machine.

      • Sausage (126F) is not at acceptable hot holding temperature of 135F. Hot hold time/temperature control for safety food at 135 F or above to inhibit the growth of harmful bacteria. Person in charge reheated sausage to an acceptable reheat temperature. Corrected at inspection.

      • White trays observed stacked on top of hand sink rendering the sink inaccessible for proper hand washing. All hand sinks shall be accessible for hand washing at all times.

    • Total violations: 3
      • Observed back door of kitchen completely open. Exterior doors shall remain closed to prevent the possible entry of pests.
      • Observed several boxes of macaroni and cheese, whole apples, and canned pineapple sitting directly on kitchen floor. Protect food by storing at least 6" off floor which will also allow for proper cleaning.
      • The ceiling light fixtures in kitchen observed with accumulation of debris.
  • Domino's Pizza # 6048, 748 East Main Street Purcellville, VA 20132
    • Date inspected: Oct. 3
    • Total violations: 2
      • Observed exterior door in kitchen to not be tight fitting. Daylight was observed around the bottom of the door seam. Ensure outer openings are protected from the entry of pests by a tight fitting door.
      • Observed wiping cloths stored improperly. Wiping cloths were observed stored in a sanitizer bucket with 0 PPM Quaternary ammonium. Ensure wiping cloths are stored in a sanitizer solution at proper concentration.
  • Chipotle Mexican Grill #3007, 1200 Wolf Rock Dr Purcellville, VA 20132

    • Total violations: 1
      • Observed several flies throughout the kitchen and dining area. The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises.

      • Observed several brooms, long handled dust pans, and floor squeegees stored inappropriately. Cleaning equipment stored where they can potentially contaminate food and food contact surfaces of the coffee and tea make station.
