Leesburg Health Inspections: Coach's Corner Grill, Manhattan Pizza
Several restaurants around the Leesburg area recorded violations during the most recent round of health department inspections.
LEESBURG, VA — Several restaurants around Leesburg and western Loudoun County recorded violations during recent inspections from the health department. Inspectors conducted the most recent restaurant visits between Nov. 1 and Nov. 6.
COVID-19 restrictions around the state have disappeared, so health inspectors have returned to conduct most restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Observed boxes of food stored in the floor in walk in freezer. Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least 6 inches above the floor.

- Bar hand sink is missing signage informing employees to wash hands. Each handsink needs signage informing employees to wash hands. Person in charge provided signage at said handsink.
- Knives at prep table stored between equipment that cannot be washed, rinsed and sanitized. Store knives in a place/manner that is cleanable and that prevents contamination. Person in charge transferred knife to location that would prevent contamination. Corrected at inspection.

- Observed items in 1 door refrigeration unit to not be cold holding at proper temperature. Observed calamari (45F), chicken (46F), cooked pasta (47F), garlic and oil (48F) cold holding at improper temperature in 1 door refrigeration unit. Person In Charge stated the prep unit was currently not working and the facility is utilizing an ice bath to maintain foods at proper temperature for items in the unit. Observed foods in ice bath cold holding at improper temperatures. Cut tomato (52F), cooked mushrooms (52F) gyro meat (52F) were observed cold holding at improper temperatures in prep unit. Ice bath observed mostly melted and not filled to the sides of the containers. Cold hold time/temperature control for safety foods at 41F or below.
- Observed time as a public health control being used for pizza slices not marked or otherwise identified to indicate the time that the food was removed from temperature control.
- Observed food stored on the floor in walk in refrigeration unit. To prevent potential contamination, ensure food is stored at least 6 inches off the ground.

- The handwash sink, across from the three-compartment sink, was obstructed by equipment stored in front of the sink. All handwash sinks are required to be accessible for food workers.
- The following time/temperature control for safety (TCS) foods were found improperly cold holding inside the table-top sandwich prep cooler #1 (internal temperatures for approximately 2 hours); cooked steak 44F and fresh mozzarella cheese 48F. TCS foods are required to be cold held at 41F or below to prevent the growth of harmful bacteria.
- Observed one cupped container of cut melon (stacked) and covered with an internal temperature of 43F for 3.5 hours. Proper cooling methods for cut melon include keeping the melon uncovered and unstacked in order to properly cool to 41F or below within 4 hours.
- Observed several boxes of single-service and single-use items stored on the floor in the dry storage area. Single-service and single-use items are required to be stored at least six inches off the floor to prevent contamination.

- The wooden Boos block table appears to have been previously used as a food contact surface however it is heavily scratched and scored and is not easily cleanable.

- Observed no test strips on mobile unit. There should be a means to test sanitation on the mobile unit.
- Observed water leaking on the ground from the gray water tank. Plumbing should be in good repair.
- Observed the lighting over the grill on working. At least 50 foot candles (540 lux) at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor.

- Observed employee washing dishes in the 3-compartment sink with disposable gloves. The employee then finished washing dishes and donned a new pair of disposable gloves without washing their hands prior to donning the new pair of disposable gloves. When changing task, ensure hands are properly washed.
- Observed kitchen hand washing sink by the dish machine area to be used to store a box of hair nets. Also observed the hand washing sink in the prep area to be blocked by 2 chairs. Ensure hand washing sinks are used for hand washing only and are accessible at all times.
- Observed slicer in need of cleaning. Slicer was observed with built-up residue on the food contact portion of the slicer. Ensure food contact surfaces are properly washed, rinsed, and sanitized.
- Observed milk in front counter fridge to be cold holding at improper temperature. Milk was observed at 44F. Ensure time/temperature control for safety foods are cold held at 41F or below.
- At time of inspection, several plumbing fixtures in the facility were unable to provide warm water in a timely manner. The 3-compartment sink near the dish machine was turned on and provided hot water at a maximum recorded temperature of 93F. The temperature would fall and then rise when run continuously. Front hand washing sink observed to have hot water of 104F. Other hand washing sinks were able to provide warm water but not continuously. The approved water system capacity shall be of sufficient capacity to meet the maximum daily water demands and the peak hourly water demands of the food establishment.
