Leesburg Health Inspections: Dead Roaches Found In Cooler
The Loudoun County Health Department recorded violations at several facilities around western Loudoun County during recent inspections.
LEESBURG, VA — Several restaurants around Leesburg and western Loudoun County recorded violations during recent inspections from the health department. Inspectors conducted the most recent restaurant visits between June 14 and June 20.
Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Total violations: 4
- Observed raw shell eggs stored over ready-to-eat foods in the downstairs walk in refrigerator. Ensure raw animal proteins are stored in a manner that prevent potential cross contamination.
- Observed chemical dish machine not sanitizing wares. Dish machine was tested and recorded at 0 PPM chlorine. EHS observed dish machine sanitizer line snapped, with chlorine sanitizer spilling onto the ground and not entering into the machine.
- Observed menu to not include asterisks next to each food item offered raw or undercooked to reference the reminder footnote on a placard near the menu.
- Observed pork thawing improperly in the 3 compartment sink in stagnant water.

- This facility does not have a certified food protection manager and cooks raw animal proteins.
- Observed food stored in cardboard boxes on the ground.
- Observed single service items stored on the floor.

- Total violations: 3
- Observed sliced ham prepared on 6/8 and coleslaw prepared on 6/7 in need of disposition. Foods have exceeded the 7 day shelf life, with day one counting as the date the foods were prepared.
- Observed from counter sanitizer bucket to have greater than 200 PPM chlorine. Ensure wiping cloths are stored in a sanitizer solution at proper temperature.
- Observed facility to be utilizing Quaternary Ammonium as a sanitizer for the 3 compartment sink. Facility does not have a test kit for this type of sanitizer to measure the concentration.

- Total violations: 8
- The bar hand sink had spoons and forks in a strainer in the sink. All hand sink should be available for employees at all times.
- Observed the dishwasher chlorine sanitizer at 25 ppm. Chlorine sanitizer should test between 50-100 ppm.
- Observed improper cold holding temperature of raw shell eggs 60F (2 door reach in cooler) and 51F in prep cooler. Raw shell eggs should be maintained at 45F or below.
- Observed improper cold holding temperature bacon 53F, 54F, multiple bags of mozzarella 53F (2 door reach in cooler) and coleslaw 45F, kimchi 44F, 45F (small reach in cooler in front). Foods held cold should be maintained at 41F or below.
- Observed two open containers of kimchi without a date mark. Ready to eat (RTE) time/temperature control for safety (TCS) food may be held for a maximum of 7 days with the day of the container is opened counted as day 1.
- Observed coleslaw that was recently prepped and placed into the 3 door reach in cooler tightly covered. Foods that are cooling should be uncovered or loosely covered to help foods cool to 41F within 4 hours.
- Observed multiple dead cockroaches in small reach in cooler. Cockroaches should be removed from the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.
- Observed microwave with food splatters and the doors of reach in coolers and prep cooler have a build up dirt and debris. Nonfood contact surface should be clean with a frequency to keep them free of accumulation of soil residue.

- Observed chlorine sanitized at dishwasher at 0 ppm. Chlorine sanitizer should test between 50-100 ppm. The dishwasher was checked at follow up because at routine inspection the chlorine sanitized at dishwasher at 200 ppm.

- There is no employee health policy (form 1B) available for verification that indicates that the employees have been trained in the signs and symptoms of foodborne illness. A verifiable means needs to be available for the Environmental Health Specialist to view that indicates that the food handling employees have been trained in the signs and symptoms of foodborne illness.
- Falafel, cooked, cooling, is being stored between containers of raw animal proteins (chicken), on bottom shelf of refrigeration unit. Maintain raw animal proteins below and separate from ready to eat food items (falafel) to prevent cross contamination. Person in charge relocated falafel to shelf above raw animal proteins. Corrected at inspection.

- Observed house made potato salad made the day before at 44F improper cooling. Cooked time/temperature control for safety food shall be cooled: 1. Within two hours, from 135°F to 70°F and 2. Within a total of six hours from 135°F to 41°F or less.
