Leesburg Health Inspections: Potbelly's, Bowlero
Several facilities around the Leesburg area recorded violations during the most recent round of restaurant inspections.
LEESBURG, VA — Several restaurants around Leesburg and western Loudoun County recorded violations during recent inspections from the health department. Inspectors conducted the most recent restaurant visits between July 19 and July 25.
COVID-19 restrictions around the state have relaxed, so health inspectors have returned to conduct most restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Potbelly Sandwich Shop, 1008 Edwards Ferry Rd NE 101 Leesburg, VA 20176
- Date inspected: July 19
- Total violations: 5
- No written procedure or kit available for diarrhea and vomiting clean-up. Written procedures should be available instructing actions to be taken by employees in order to minimize the spread or contamination to vomitus or fecal matter. Provide with 10 days.
- Meatballs were observed with an internal temperature of 120F. The meatballs had been in the steamtable for approximately 45 minutes. Meatballs are to be hot held at 135F or above to prevent the growth of harmful bacteria. Corrected by reheating the meatballs to 168F internally within 15 minutes.
- Hummus, chicken salad, lettuce, tomatoes and sliced turkey were found improperly cold holding at 45F, 45F, 48F and 52F respective internal temperatures. These items were found in the top portion of prep coolers located between the conveyor oven and steamtable for approximately 3.5 hours. Time Temperature Control for Safety (TCS) Foods are required to be cold held at 41F or less to prevent the growth of harmful bacteria. Corrected by placing items uncovered into the walkin cooler and cooled to 41F or less within 30 minutes.
- Health Specialist observed a food worker slicing deli meats and later observed the same deli meat inside the walkin cooler covered and stacked with an internal temperature of 51F for approximately 40 minutes. Foods shall be cooled by approved methods such as using shallow, uncovered pans in order to cool foods quickly and prevent the growth of harmful bacterial. Food worker unstacked and uncovered the containers of deli meats to provide rapid cooling.
- Observed wet pans stacked on a shelf. Dishes are required to be air dried or used after adequate draining before contact with food.

- Total violations: 4
- There is no verifiable means of an employee health policy which indicates employees have been trained in the signs and symptoms of illness.
- Hand sink blocked with various bottles.
- Utensils, blender carafe, cutting boards, knives, etc. are not being washed rinsed, sanitized.
- Chemicals (cleaning solutions) being stored on upper shelf, above a prep/serving/service area.

- Total violations: 2
- Observed the one hand sink in the kitchen blocked by boxes and a tray covering it. All hand sinks shall be easily accessible at all times for ease of use by food employees.
- Cleaning chemicals such as sanitizers improperly stored in dry storage over single service drinking cups.

- Observed: Raw shell eggs stored above ready to eat food (garlic bread). Raw animal proteins (raw shell eggs) need to be stored below or separately from ready to eat food. Person in charge relocated eggs to be stored below ready to eat food. Corrected at inspection.
- Sausage being stored in walk in refrigeration at 62F has condensation on overwrap. Arrange the food containers in the refrigeration equipment to provide maximum heat transfer through the container walls. Loosely cover or uncover the food if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Person in charge discarded said food. Corrected at inspection.

- Garlic in oil found improperly cold holding with an internal temperature of 52F in top prep cooler. Garlic in oil is considered a Time Temperature Control for Safety Food and is required to kept at 41F or below to prevent the growth of harmful bacteria. Corrected by placing into bottom prep cooler unit.

- Date inspected: July 24
- Total violations: 5
- Observed both bar and kitchen chlorine dishwasher sanitizer at 0ppm. Chlorine sanitizer should have concentration between 50-100 ppm.
- Observed improper hot holding temperature of nacho meat 103F in steam table. Foods held hot should be maintained at 135F or above.
- Observed improper cold holding temperatures shredded mozzarella 50-60F, salsa 50F, sour cream 48F , cooked chicken 55-58F, cooked steak 55F, 57F. Food held cold should be maintained at 41F or below.
- Observed ice scoop in stagnate room temperature water. In use utensils should be in water that is 135F or in running water.
- There was no testing strips for the quaternary at 3-compartment sink. Facility should have a means to test the quaternary at 3-compartment sink.
