Leesburg Restaurant Inspections: Flies Found In Kitchen
The Loudoun County Health Department recorded violations at several facilities around western Loudoun County during recent inspections.
LEESBURG, VA — Several restaurants around Leesburg and western Loudoun County recorded violations during recent inspections from the health department. Inspectors conducted the most recent restaurant visits between June 28 and July 3.
Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- Total violations: 6
- Observed employee personal food opened on preparation table. Also observed an employee personal drink on preparation table. Personal drink was an open cup. An employee shall eat and drink only in designated areas where the contamination of exposed food; clean equipment, utensils, and linens; unwrapped single-service and single-use articles; or other items needing protection cannot result. A food employee may drink from a closed beverage container if the container is handled to prevent contamination of the employee's hands, the container, and exposed food; clean equipment, utensils, and linens; and unwrapped single-service and single-use articles.
- Observed an employee adding food garnishes to drinks with their bare hands. Food employees shall not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment.
- Observed raw chicken in a large container sitting out of refrigeration at 56F. Cold hold time/temperature control for safety foods at 41F or below.
- Observed several flies throughout the kitchen. Flies were specifically heavy in area near dish machine and frying station.
- Observed a personal drink submerged in bulk ice machine. Ice is used for consumption. Ice shall not be used as a cooling medium and then be used as food.
- Observed mops in mop closet not allowed to air dry. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.

- Whisk observed in hand sink in kitchen. A hand washing sink may not be used for purposes other than hand washing. PIC(person in charge) in charge removed whisk. Corrected at inspection.
- Raw shell eggs (in dozen carton) setting above vanilla yogurt. Raw animal foods (raw shell eggs need to be stored below and separate from ready to eat food. Person in charge relocated carton of eggs to lower shelf. Corrected at inspection.

- There were no paper towels available at the employee hand wash sink. Each employee hand sink needs to be supplied with soap, paper towels, trash can. Corrected at inspection.
- Potato salad in walk-in refrigerator does not have date mark. Date mark the container of RTE time/temperature control for safety (TCS) food prepared and held for more than 24 hours in the food establishment to indicate the day or date by which the food shall be served or sold. The RTE TCS food may be held for a maximum of 7 days with the day of preparation counted as day one.

- At time of inspection, employees stated that the person in charge was not at the food establishment. The permit holder shall be the person in charge or shall designate a person in charge and shall ensure that a person in charge is present at the food establishment during all hours of operation.
- At time of inspection, employees could not locate verifiable employee health policy for current working employees. A verifiable employee health policy should be available.
- Facility utilizes time as a public health control rather then temperature control for half & half. The time of when the food item was removed from temperature control was not marked or otherwise identified for the half & half. The food shall be marked or otherwise identified to indicate the time that is four hours past the point in time when the food is removed from temperature control.
