The Hi-Tide Lounge is designed to be an intimate, retro-vibe corner cocktail bar that will be open every day, with a small menu of Tiki-inspired drinks that come frozen, on tap or signature categories. Bar snacks will come in the form of primarily seafood appetizer options, and happy hour will feature reduced-price drink and menu items Monday-Friday, from 3 - 7 p.m.

Executive chef is Santiago Lopez with Walter Silva serving as Chef de Cuisine. The all-day menu at Vola’s will be based on simple classic seafood and waterfront-inspired foods made with peak season ingredients. Highlights include: an abundant Raw Bar with freshly shucked oysters varieties, shareable items like Smoked Fish Dip, Conch Fritters, Broiled Oysters “Brennan’s Style,” and Waterfront Bacon Cheese “Tots.” Soup & Salad options hint at classic dockside flavors and recipes like Chesapeake Bay Chowder, an Iceberg Wedge and a Grilled Shrimp Salad.

A Lobster Roll, Sweet Pickle Brined Fried Chicken Sandwich, and Lobster or Crab Po’Boy sandwiches enhance the offerings. Nods to regional flavors, sourcing and cooking styles come through the Baskets and Steamer Pails sections, with abundant selections that include Florida Grouper, Atlantic Cod Fish & Chips, and Crab Cakes in a traditional red basket, and made-to-order bountiful regional mixes of crab, mussels, lobster, shrimp, kielbasa, potatoes or corn served in classic galvanized pails. Sides like Old Bay Fries, Hushpuppies, and Grilled Corn on the Cob are additions to dishes.
