Taco Bamba Chef To Open Electric Bull, A Steakhouse, In Vienna
Chef Victor Albisu is working to open a boutique steakhouse not far from his Taco Bamba location in his hometown of Vienna.
VIENNA, VA — The chef behind Taco Bamba is expanding his reach in his hometown of Vienna with plans for a boutique steakhouse.
Chef Victor Albisu announced Electric Bull will open in summer 2025 at 176 Maple Ave. West, three doors down from Taco Bamba. Albisu was a former award-winning chef of BLT Steak and owner of the former Argentine grill Del Campo. He now owns 15 Taco Bamba locations in Virginia, Maryland, the District of Columbia, North Carolina, and Tennessee.
"My upbringing in a Latin butcher shop, learning the craft from Argentinean butchers, has been a cornerstone to my culinary career," said Albisu via a news release. "I’m ready to challenge expectations for what a neighborhood steakhouse can be, and I believe Vienna is the perfect place to do it. It’s been home to my family and my businesses for more than 15 years."

Electric Bull will be a full-service steakhouse, starting with a raw bar serving crudos, ceviches, carpaccios, and tartares. Oysters will be available raw or grilled. Bread service includes the option for the Argentine specialty fugazetta pizza with caramelized onions and mozzarella. Eggs are on the menu all day in the form of omelets, scrambles, fried egg platters, and steak and eggs, with additions like caviar and truffles.
Steaks take center stage with options like hanger steaks, teres major, picaña, flank and flat iron steaks, South American-style short ribs, house-made chorizo from a family recipe, lamb ribs, sweetbreads, and other cuts. Albisu will also bring back his menu-favorite burger and rolled skirt steak. The latter was used when Albisu beat Bobby Flay on the Food Network show.

The 2,500-square-foot steakhouse will have 80 seats for dine-in service, with a full-service bar and front patio. Electric Bull will offer takeout options as well as a butcher counter with meats, dressings, marinades, and dry rubs. Raw and cooked items like salads and roasted vegetables, will be available for takeout from the restaurant's back entrance.
"The dining room will be a lunch and dinner destination, and we’ll have a small butcher counter for guests to order and pick up meats and accompaniments for nights when they want to grill at home, as I often do," said Albisu.
Albisu has been honored as chef of the year by the Restaurant Association of Metropolitan Washington in 2015 and received James Beard Foundation nominations for Best Chef Mid-Atlantic in 2016 and 2020. In 2015, his steak and eggs signature dish beat Bobby Flay on the Food Network. He has worked on global culinary relief efforts, including with CARE and as a founding board member for World Central Kitchen. Albisu is a co-founder of Smile on the World, a nonprofit group of chefs and doctors providing aid and medical care to communities in need, and co-led relief trips to Peru and Mexico. He is also part of the Department of State and James Beard Foundation's American Culinary Corp and has been a guest chef on Telemundo’s Top Chef Estrellas and the FOX TV series Hell’s Kitchen.
