Crab Temperature Too Low, Undated Food: Vienna Restaurant Inspections
Health inspections in January found violations like a buildup of debris and grease in various areas and improper seafood hot holding.
VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.
The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.
Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

This week's report focuses on reports in January around the Town of Vienna. See inspection results below, and click on each link to see current and past reports for each restaurant. Of note, Sushi Oishii AYCE had nine violations, including a buildup of debris and dust in various areas and seafood hot holding at too low of a temperature.

- Working containers of poisonous and toxic materials are not properly labeled with a common name. Unmarked spray bottles of toxic chemical solutions were not labeled to identify contents.

- Observed that the SELF-CLOSING DEVICE AT THE BACK DOOR IS BROKEN AND is not maintained in good repair.
- Milk crate(s) found used for the following purpose(s): As racks to elevate food supplies above the floor, inside the walk-in freezer.
- Food stored on the floor and/or food stored less than 6 inches off the floor. Observed food containers and packs stored directly on the floor in the walk-in the freezer and in dry storage areas.
- Observed that the floor inside the walk-in freezer is in need of cleaning. The floor at the back area near the mop sink storage area is also in needs of cleaning.

- The handwashing facility located at the 3-compartment station in the kitchen, was blocked with large containers, preventing easy access by employees for easy handwashing.
- The following food items that are not easily identified by appearance were observed without a label: Soy sauce, sweet sauce, chicken powder.
- Observed that the floor under the kitchen hand Sion’s, 3-compartment sinks, under the fryer, under refrigerators and other stationary equipment, is in need of cleaning. Grease build-up noted under the cooking equipment located under the hood system. The exterior surfaces of the grease trap was noted to be soiled and in need of cleaning.

- Raw animal food storage, preparation, holding or display conducted in a manner that may cause cross contamination of ready-to-eat food as follows: OBSERVED RAW FISH AND CHICKEN STORED ABOVE VEGETABLES, INSIDE THE WALK-IN REFRIGERATOR.
- The following food item(s) were observed hot holding at improper temperatures using a calibrated food temperature measuring device: SOFT SHELL CRAB=77F, SHRIMP TEMPURA=88F.
- The HOT WATER TEMPERATURE AT THE HAND WASHING SINKS WAS INADEQUATE, NOTED TO BE ONLY 88F WHEN CHECKED.
- Observed that paper towels were not provided at each handwashing sink. There were no paper towels at any of the hand washing sinks.
- Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.OBSERVED WET WIPING TOWELS STORED ON CUTTING BOARDS AND WORK TABLES, IN-BETWEEN USES.
- Employees observed wearing jewelry on their arms and hands while preparing food. FOOD HANDLERS WERE OBSERVED WEARING WATCHES.
- Food stored on the floor and/or food stored less than 6 inches off the floor IN THE WALK-IN REFRIGERATOR AND IN THE DRY STORAGE AREAS.
- Observed that the FLOOR UNDER THE DISH WASHING MACHINE, 3-COMPARTMENT SINK, UNDER COOKING EQUIPMENT, UNDER REFRIGERATORS ON THE COOK-LINE, AND OTHER STATIONARY EQUIPMENT INCLUDING THE DRY STORAGE AREAS, IS IN NEED OF A THOROUGH CLEANING TO REMOVE BUILDUP DEBRIS AND GREASE. THE FLOORS INSIDE THE WALK-IN REFRIGERATOR AND WALK-IN FREEZER IS ALSO IN NEED OF CLEANING.
